Fantástico!

I don't know about everyone else, but I thought this past weekend's Mexican Fiesta was great! It certainly took a lot of work, especially for the meal team, but I think the change of pace was worth the fun experiment. Thanks again to everyone for their hard work and another successful club gathering!

We enjoyed in true Mexican style:
  • Refried Bean Dip from Heather & Dave
  • Green Posole with Chicken from Phil
  • Roasted Chipotle Salsa from the meal team (Jonathan expertly roasted tomatoes. We added three chipotle peppers, not one)
  • Fresh tomoato salsa from the meal team (Phil chopped tomatoes like nobody's business, and Chad had lots o' chopped veggies to add. We added serano peppers to this one for hotness. Source: Weber's Big Book of Grilling)
  • Chorizo Taquitos from the meal team (interesting feats with chorizo grease from Dave. We didn't use guacamole, but added the fresh tomato salsa to these)
  • Steak and Chicken Fajitas from the meal team (Chad marinated like a pro. We used Corona instead of tequila and didn't add coriander)
  • brown rice (yeah, it was instant) from Karen
  • Jarritos sodas in tamarind and tutti-frutti from Kristi
  • Fried Ice Cream with chocolate sauce from Heidi, Rose & Kristi (with expert frying equipment & advice from Michelle)
  • Sopapillas with powdered sugar and honey from Jill, Michelle & Karen

All I can say is - YUMMY in my tummy, and hopefully yours too.
